Ratatouille Vegetables served with Baked chicken

mandoline for slicing your veggies perfectly.
1 italian eggplant (that just means the small eggplant)
1 zucchini
1 summer squash
4-5 plum tomatoes
2 red peppers
1 cup tomato sauce
herbs de provence
salt and pepper to taste
1 tablespoon olive oil 

What you'll do:
Preheat oven to 375. Coat the bottom of your dish with 1 cup of your favorite store bought or homemade marinara sauce. Slice up all the vegetables with a mandoline slicer so that they are similar in shape and size. Layer/alternate each vegetable in a dish like so over the sauce..
